The Beginning of the Main Harvest 2004

This week, in glorious weather, we begin our main harvest.

The autumn wind has already blown off many leaves. Ripe grapes are hanging free and look beautiful. Compared to 2003 the sugar gradations are a little lower, the acidity a little higher, which will result in more freshness. The fruit taste promises wonderful wines.

The harvest will begin with Zweigelt, St. Laurent and Pinot Noir – a part of the Pinot Noir has already been harvested earlier, as base wine for our sparkler. The main red harvest will produce wines which are going to fill something of a gap in the market: delicate, fine, perfect with food, but unobtrusive, dry and without any astringent tannins.

We use the cool mornings to cellar our crushed grapes very cool to allow a one to two week maceration period on the skins at 10°C, before fermentation will make the temperature rise to some 28°C, extracting colour and tannins.
