.. harvested the Spiegel vineyards (Pinot Blanc and Pinot Gris). The grapes had a sugar concentration of 20°KMW, were very healthy, and had tasted beautiful. The weather these last few days was pleasantly fresh, and the grapes tasted ample and warm but still had freshness, really the ideal point for harvesting.
The highest priority for grapes and wines is the drinkability of the wines, and we don’t use any sulfur to disinfect the grapes. Absolute hygiene and the highest cleanliness of all utensils in contact with the grapes are therefore paramount, and all tools are washed with fresh spring water. The processing of the grapes happens as carefully of possible, and there is hardly any cloudiness in the must, which would necessitate fining and filtering the wines later.
Wines should be exciting and should tasted beautiful, should stimulate the senses and reflect nature, but they should also be good for you.
