After 90% of the sekt base wine have been harvested, we are now considering to ligthen the load for the young vines, so that their still green leaves will be able to use precious energy in autumn do develop the wood and their vital strength. The older vines and the grapes maturing on them can be left to face the elements for a little longer.
The harvest is proceeding in many, small steps - and always manually. This is a slow process during which our harvesters are becoming true grape experts. Every single berry is unique and tastes slightly different from other berries. Only in the fermentation vats will all beeries be blended an find a common "sound".
We are slowly harvesting the individual vineyards. For the following week, we are planning to harvest the first Grüner Veltliner grapes. The rest depends on the development of the foliage - and of course on the taste of the grapes.
